Organising a course
1. Course Objectives
To update on food safety issues and current trends To full acquaint participants with HACCP principles, which are considered the best training in food safety in the Inflight Catering industry To give participants the necessary training to fully implement the HACCP system in their workplace
2. Course Content
The course covers an overview of food safety issues; an introduction to HACCP principles; identification of hazards; critical control points, legal issues; supplier and self-auditing procedures. There is associated group project work.
3. Who should attend HACCP Courses ?
HACCP courses are designed primarily for supervisors, junior and middle management involved in operational areas in Flight Kitchens.
4. Certification
ITCA will issue certificates to all participants who have successfully attended an ITCA HACCP course.
The Organiser
Shall be appointed by the Regional Director.
Shall be on site him/herself or appoint a locally based contact for all administration arrangements.

- Arrange equipment
- Arrange lunches and coffee/refreshments as appropriate
- Note that ITCA is responsible for meeting room, equipment and lunch/coffee costs.
- Hotel Booking

Book hotel accommodation for participants and trainers as required Note ITCA is responsible only for trainers accommodation costs; participants must settle their own hotel costs.
- Invitations
- Obtain mailing list advice from Regional Director. It is suggested that Flight Kitchen facilities be contacted directly rather than Head Offices
- Draft Invitation letter to be sent over Regional Director signature covering:
- Outline course details
- Date and location
- Details of trainer and their background, if possible
- Course fee
- Mention of Certificate on successful completion
- Payment details : cheques or bank drafts (in sterling) made payable to ITCA to be returned together with Application Form to organiser for registration purposes
- Emphasis on participants responsibility for their own travel and hotel costs (noting that they will have to pay hotel costs on checking out)
- Visa requirements (if applicable)

- Receive completed application forms from participants
- Ensure cheques/bank drafts are properly issued for each participant
- Forward all above payments to Association Services
- Follow up with participants to confirm attendance
- Inform Education Committee of attendee list

Arrange payments for meeting venue and equipment rental, lunches and coffees, etc. from Association Services
Produce an Income & Expenditure report after the completion of the course. Copies to Chairman of Education Committee and Association Services
